This is possibly THE Best Stuffed Mushroom Recipe

As you know I recently got an Ooni Fyra Pizza Oven. One reason I was excited to get this was it just doesn’t cook #pizzas. If I wanted to I could cook my entire meal #outdoors using my Big Green Egg and the Ooni. You can easily cook veggies and meats as well!


Last Saturday afternoon I was feeling peckish AND adventurous. I had some very nice Baby Bella #Mushrooms in the fridge and some fresh basil, sweet peppers, pancetta and fresh mozzarella. I thought hey, stuffed mushrooms in the pizza oven?!?

Here is what you’ll need and how to make 6 stuffed mushrooms:


7 Baby Bella or Crimini Mushrooms - Medium Sized 🍄

Finely dice one of those Shrooms

1 Shallot - Cut into thinnish slices

1 🧄 Garlic Clove - Finely chopped

1 🌶 Sweet Pepper - Finely Chopped

1/8 Cup of Pancetta


Sauté those items on medium low heat in a little olive oil, starting with the pancetta then add other ingredients in this order: Garlic & Shallots, Sweet Pepper, then Diced Shrooms, add some salt & pepper. Sauté until they are about 3/4’s cooked. Remove and add to a bowl.


Dice 2 slices of fresh mozzarella.


Incorporate 1/2 the mozzarella some fresh basil, parsley & pine nuts into the mixture. I did not measure the greens and nuts; went with less is more but enough for texture and color. Add a little salt & pepper and then spoon into the Shrooms.


As you fill the shrooms place the stuffed Mushrooms into a cast iron skillet and top with shredded fontina, parmesan, provolone and asaiago, Trader Joe’s has a bag of it. Then add your remaining mozzarella and a few pine nuts, salt & pepper.


The Ooni pizza oven was about 750 but you could broil it in a regular oven until the cheese is melted. I like a little color on my cheese but not too burnt.

I took each mushroom out and plated it. Garnished with a little more shredded cheese and fresh basil/parsley.

The finished product was sooooo tasty 🤤
